Pancakes

This is my pancake method that I have been using for years.

Method

Fill the jug up to 4 fl oz with flour. Top up to 12 fl oz with milk. Add the egg. Add a pinch of salt if you want. Whizz for a while until the mixture is really smooth. If any flour sticks to the inside of the blender scrape it off and whizz again.

Get the frying pan hot and put a bit of oil in the pan. Use a scrunched up bit of kitchen roll to spread the oil round the pan so it forms a thin film. Try your first pancake. Note that the first one is usually rubbish so don't worry. Tip some mixture into the pan and swirl it round so it covers the base of the pan. If it doesn't add a bit more mix. Let it solidify and when it does lift up one edge with your spatula; it should be going golden brown. When it is flip it over, either with the spatula or by flipping the pan with your wrist.

Like I said the first one is usually rubbish and after about 2 or 3 you will want to turn the heat down. Repeat until you have used up all the mixture. You should have a pile of about 10 pancakes.

Eat them how you like. My kids like them with lemon juice and sugar. Personally I like to crisp up some streaky bacon and crumble it over the pancakes with a slug of maple syrup.
